Nicholson’s Meat Company has been a family owned and operated business since John and Beth Nicholson established it in 1974. In 2005, we, Lee and Danita Walston, became the proud new owners of a great family business that continues to provide the highest quality in products and services in the meat industry. Our Jerky, Snack Sticks, and Smoked Dried Sausage are the crown jewels of our business. We offer a line of meat products that are specially seasoned, hickory smoked and fully cooked to gourmet perfection. Our smoked meats have won Grand Champion Blue Ribbons in state meat competitions judged by the Texas Pork Producers Association, the Texas Poultry Federation, and meat specialists from Texas A&M and Texas Tech Universities. The San Angelo Standard Times touts our jerky as "The Holy Grail" of jerky. We believe that once people try our products, they become customers for life. We also take pride in our custom slaughter/processing and wild game processing services that we offer to our loyal customers. Nicholson’s is nestled in the small-town of Mertzon in west Texas. Being a small-town business means we have small-town values, which translates into attention to detail and friendly service. Just as John Nicholson said it in his day, we still say,
